Is there a way to see exactly what an app is doing once it requests root permissions?

I'm trying to solve a little mystery, and the Roku forums it's been noted that the Roku app request root permissions at a random interval. This is real suspicious and the company of course hasn't said anything about it. Is there a way to allow permissions on say a burner phone and then see exactly what it does with them?
